Why that matters
Coffee peaks between 7 and 21 days after roasting. During that window the CO₂ is slowly releasing, the oils are at their most expressive, and the flavor is at its most complex. After that window, it's still drinkable — but it's slowly going flat.
Most coffee you buy — including from brands with premium packaging and good stories — is already past that window by the time it reaches you. It was roasted in bulk, boxed up, and warehoused until orders came in. The gap between roast date and your door is typically 3–6 weeks.
At UFuKoffee, your order is the trigger. We roast it the day you place the order. You receive it at the start of the freshness window, not the end.
Specialty grade — what that actually means
Specialty grade means the green beans scored 80 or above on the Specialty Coffee Association's 100-point scale before we touched them. It's the top tier of commercially traded coffee — roughly the top 3% of what's grown globally.
It's not a marketing term. It's an audited grading standard. Supermarket coffee doesn't reach it. Most popular online brands don't either. It's where the distinct flavor profiles actually come from — the wine-like Ethiopian naturals, the bright clean Costa Ricans, the deep earthy Sumatrans.
